Custom Processed Beef Orders        Delivery Date: Mid-Nov 2012

            All orders will be cut and wrapped and shipped to Kodiak from our ranch at Sitkinak Island.  Pricing for initial sale is based on the hanging weight so you don’t pay for the skin, head, or stomach.  You can buy either a whole or half beef.  Prices are as follows:

This price is broken down into the following: $______/lb carcass weight, $______/lb processing fee, $______/lb shipping.

For orders outside of Kodiak, there is an additional $0.40/lb charge for shipping with ACE Cargo.  You can pick it up in Anchorage.

What to expect

Each animal will be different in weight, and selected randomly for each customer.  Weights will range on a Whole Beef from 180 to 300 lbs per beef depending on body size.  So please specify if you’d like a large or small one.  Our average weight is 250 lbs for a whole beef.  So with that average you can figure what to expect:

WHOLE BEEF PACKAGED WEIGHT: 210 lbs x 75% = 157 pounds

HALF BEEF PACKAGED WEIGHT: 105 lbs x 75% = 79 pounds

 

How to figure yield:

You pay $_____/lb on the hanging weight which is the beef carcass hanging on the rail.  After fat, bone, and trimmings are cut off, you will end up paying somewhere around $5.50 per pound on the finished weight.  It is important to understand this ahead of time.  We are required to do it this way by USDA.

To find the approximate cost per pound of cut and wrapped meat, divide the price per pound "hanging weight" by the percent.  REMEMBER: You are getting high quality steaks, ground beef and other cuts for this price!

Regular Package- 4 steaks per package

Based on 157 lbs yield:

Ground Beef = 40- 2# packages                                  Roasts = 6- 4# packages

Steak = 15- 2# packages                                              Ribs = 4- 3# packages

Stew Meat = 3- 2# packages                            Soup Bones = 2- 2# packages

You can customize this package.  If you would like more ground beef, please specify which cuts you’d like to be ground (i.e. no stew meat, no ribs, less roasts, etc).

Other fees

If you would like more steaks per package, please let us know and the meat crew will be delighted (it is quicker that way).  If you’d like less than 4 steaks per package, there is an additional flat fee applied to cover time spent making smaller roasts and using more materials to package smaller amounts:

3 steaks per package = $10.00

2 steaks per package = $25.00

1 steak per package =  $50.00

 

*Please provide us with your name, contact info, # of steaks per package, and special requests that differ from the Regular Package.  For new customers, we require a $100 non-refundable deposit to hold your order.
